Son souhait : passer de l&rsquo;elevage intensif \u00e0 un petit elevage gr\u00e2ce \u00e0 la vente directe des porcs transform\u00e9s (viande fraiche, conserves, salaisons) et diversifier les cultures pour viser l&rsquo;autonomie alimentaire (ma\u00efs, orge, pois prot\u00e9agineux, triticale, vesce).<\/p>\n<p align=\"JUSTIFY\">En 2012 Sylvain atteint ses objectifs : le nombre de porcs sur l&rsquo;exploitation est divis\u00e9 par 10 et tous sont vendus sur les march\u00e9s, \u00e0 la ferme et en magasin de producteur ; un syst\u00e8me de rotation est mis en place sur les parcelles. En 2015, Guy prend sa retraite, et Sylvain s&rsquo;entoure de deux salari\u00e9s.<\/p>\n<h3 align=\"JUSTIFY\"><\/h3>\n<h3 align=\"JUSTIFY\">La ferme<b><br \/> <\/b><\/h3>\n<p>La ferme est situ\u00e9e dans la commune de Garl\u00e8de-Mondebat, canton de Th\u00e8ze, au nord du d\u00e9partement. Elle compte 60 hectares : 55 de cultures et 5 de bois et prairies. Le troupeau se compose de 150 porcs de race Landrace crois\u00e9 Duroc.<\/p>\n<p>Afin de sauvegarder la tradition et de garder le go\u00fbt d\u2019une viande tendre et persill\u00e9e, les porcs sont \u00e9lev\u00e9s sur paille et en plein air jusqu\u2019\u00e0 180kg.
